A 1991 issue of thejournal, The Institute of Food Technologist, describedsix different types of vegetarians: Semi, eating dairy,eggs, chicken and fish; Pesco, eating dairy, eggs andfish; Lacto-ovo, eating dairy and eggs; Lacto, eatingdairy, but no eggs; Ovo, eating eggs, but no dairy;Vegan, eating no animal foods of any type.Many vegetarians will jump back and forth betweenone type of vegetarianism and another. JuniorAnneliese Van Arsdale has been a lacto-ovovegetarian for six years and recently tried veganism.Me and Lizz [Hershey] tried it at the beginning ofthe summer. We would take turns while one of uswould eat dairy the other one wouldnt so we werelike, Yeah, were still vegan, Van Arsdale said.People who are vegan run a higher risk ofmalnutrition because of limiting their diet to onlyplant based foods. Nutrients such as iron, copper,zinc and vitamin B12 are important for the bodysfunctions and found mostly in animal foods.People who are vegan as well as vegetarian areencouraged to take multi-vitamins and eat a widevariety of legumes and grains for adequate nutrition.You got to eat a lot of potatoes and legumes likebeans. Youve also got to eat fruits, vegetables andrice. My favorite meal is vegetable lo mein with friedrice and sweet n sour sauce, junior Nic Jones said.There are several companies that make fakemeat products such as Chicken-Free Nuggets madeby Health is Wealth. Another product available iscalled Tofutti, which is a non-dairy ice cream forvegans.Junior Amanda Schick, lacto vegetarian for threeyears, had an experience with fake meat. She said,Tofurky is nasty. Its vegan and they mold it to looklike a turkey. I got it last year for Thanksgiving.Reasons for initially becoming a vegetarian rangedfrom animal rights to the way meat tastes.In the beginning it was about animal rights. I wasjust appalled at theway the animalswere treated, butthen the shock of itwore off, so now Ijust do it because Idont like the tasteof meat, Schicksaid.Van Arsdaleagreed. I was 10,and rebellingagainst my parents,and I dont like theway meat tastes.
