Description: Peru offers the most culturally diverse cuisine in South America. Pre-Incan, Incan, and a variety of other cultural groups influence the overall cooking experience. Peru has three geographical regions: the tropics, the mountains, and the desert. A common ingredient found in all the cooking is aji, a hot chili pepper spice.
